Sensational Menu - This Tuscan cooking school offers a unique menu that will appeal to the SENSES

Thanks to the chefs extensive experience with many culinary traditions, including Italian, French, Portuguese, East Asian and African, he has come to appreciate the marvelous aphrodisiac effects of food and cooking, and he has created a culinary course on this subject.

This course has been one of the clients favorites at this cooking school and the course shows that not only specific foods and ingredients but also have an aphrodisiac power, but that also the presentation and the act of cooking itself create this special effect.

An example of such menu is as follows:
  • Antipasti: Sage leaves fried, Stuffed zucchini flowers, Crispy salad with Farro, Tuscan Black crostini, Bruschetta with fresh tomatoes
  • Primi piatti: Tagliolini with Truffle, Tagliatelle with cherry tomatoes and arugula, Risotto with green peppercorn and Vin Santo
  • Choice of Main courses: Duck a l'Orange Senese style, rack of lamb with rosemary
  • Dessert: Tiramisu

Seasonal Menu with focus on seasonal ingredients or special events and holidays. 

The seasonal courses in the cooking school in Tuscany focuses on fresh ingredients that reach their perfection in a specific month.

Autumn menu - composed of a vegetable tart with a pecorino cheese sauce, pennette with rucola and fresh tomato sauce, pheasant baked with vegetables and sangiovese grapes, and our special Tiramisù served with juicy seasonal fruits.

Halloween Menu - Black cabbage polenta with pumpkin & chillies, pumpkin & white bean soup, risotto with green pepper corns & pumpkin, The Bat's Cousin (pheasant deboned & stuffed with sangiovese grapes), pumpkin tart, bone-shaped cookies.

New Years Eve Menu - Pockets filled with ricotta and herbs served with two sauces, Seafood risotto, Salmon in cartoccio, passion fruit sorbet, beef fillet with herbs and truffles, cheese platter, a gelato of pistachio with a ciocolate sauce.

Or try a Classic Menu such as Tasting Menu, Tuscan Classics or spicy Calabrian Menu. These are the cooking courses that we have been favorites of the clients at this school in Tuscany over the years.

Tasting Menu is composed of a mousse of vegetables with a tomato sauce, Fillets of chicken rolled in chicory leaves with a herb sauce, Tagliatelle with Crete Senesi truffles, Risotto with wild berries, roasted pig, selection of Pecorino cheeses served with a home-made fig marmalade, desserts.

Menu a Sorpresa is a menu inspired by the Tuscan morning. By its mood, by a special ingredient the chef has found at the farmers' market, or by a particularly irresistible bunch of herbs and veggies in his garden. Students love the element of surprise.

Regional Menu contain the classic recipes from their favorite Italian regions. The prime of place belongs to Tuscan Menu . If you like spicy southern Italian flavors, you will enjoy the Calabria Menu. Another favorite is Roman Holiday where the chef lived for 2 years, and loves its food.

Customized Courses such as Cooking for Newlyweds, Families with Children, Menu with Truffles, Seafood Extravaganza, or anything that might interest you. 

This Tuscan cooking school offers customized courses that are tailor-made in 2 ways: format and contents.

In terms of format, they offer courses for Families with Children. The course is exciting and educational because it teaches the kids from an early age that cooking is fun and easy, and that home-prepared dishes are must more interesting than fast food. Naturally, the recipes selected are easy and safe.

Cooking for Newlyweds - This is a "kitchen initiation" course for those who have passed their single life relying on take-out, and would like to warm up their new, shared home with some good cooking.

The course teaches basic recipes & techniques: how to julienne veggies or debone a chicken, how to cook pasta al dente, & more. In terms of contents, they satisfy the interests of both novices and seasoned cooks.

If you are interested in Cooking with Truffles, we can offer you a specialized course paired with a truffle hunting excursion (seasonal).

And lastly, if Seafood is your passion, we offer a course that employs fish & seafood in every dish.
